This is a Neapolitan favorite! We use only the best fresh mozzarella money can buy...Wisconsin's own Grande Fior di Latte cheese, with vine-ripened Roma tomatoes, fresh basil leaves, extra virgin olive oil and cracked bell pepper. Simple and delicious.
Antipasto di Montagna

The Antonio
This salad is named after our father, and it is how he eats his salad. A mix of romaine and gourmet spring mix with mozzarella cheese, pepperoni, artichoke hearts, black olives, pepperoncini and red onion topped with garlic, herb crostini and creamy Italian dressing.

Calderone Hero
My brother, Ilario, brought this sandwich recipe back from Philadelphia. Fresh Italian sausage topped with sautéed mushrooms, onions, sweet bell peppers and black olives, finished with melted mozarella chesse and our marinara sauce. Bring a hearty appetite!

Classic Italian all-vegetable stock with a variety of garden vegetables, Italian beans and potatoes finished with extra virgin olive oil.
Chicken Chowder
Tender chunks of chicken, potatoes and seasoned vegetables simmered in cream chowder. Chef Gino developed this recipe while at the CIA in Hyde Park, NY.
PIZZA
Our traditional, award winning, Neapolitan thin-crust pizza is from the original Third Ward Caradero Club recipe dating back to 1945, making it the oldest – and the best – pizza recipe in Wisconsin. When Chef Gino's father, Antonio, bought the Caradero Club in 1969, from the original owners, this recipe passed into the family.
